I know it's not exactly the first thing that comes to mind when you think of thievery, but alchemy can have some serous benefits for a thief. You often need potions for curing diseases, restoring attributes, healing, and so on. As a thief, you may, at times, be unable to just walk into a city full of guards and go shopping. That's why it's helpful to be able to create the potions you need, rather than buying them in the shops of the major cities.

And don't forget about poisons. There's nothing like stabbing some poor fool with a poisoned blade and staying behind your shield while it takes effect. I've used this strategy hundreds of times, when some bandit or necromancer thinks he's a tough guy.

Lastly, I have a useful tip for the more experienced alchemist; chameleon potions. Mix some radishes and bloodgrass or daedra silk and BAM! you've got a potion that makes you a certain percentage undetectable (that percentage will increase with practice). Let's say it's 25%; just make and drink four of them and you are completely invisible!  And it's far better than the ordinary invisibility potions because you can open doors, pick things up and even attack without losing the effect.
